IIRC, current Adobe apps can be customised using JavaScript. Google for ListItems.JS and HideItems.JS which were originally authored for Reader but can be adapted to suit your purpose.

Any luck with this? I was able to find the registry for adobe 8.0 but not for this
[HKEY_LOCAL_MACHINE\SOFTWARE\Policies\Adobe\Adobe Acrobat\8.0\FeatureLockDown]
