If you mean to disable an option on the application's window itself, I very much doubt that you would be able to do that, unless you want to get in to editing resources in Windows binaries. The simplest route is to add the update target URL to the black-list in your router/firewall/whatever or if, as in so many cases, this involves 284 layers of bureacracy to get done, you could add it to the workstation's HOSTS file with the URL pointing to the local loopback address.
