You can grab the full installer by installing it on a machine via Windows Update. Once you see the splash screen for the Windows Essentials installation, simply navigate to "C:\Windows\SoftwareDistribution\Download\Install" and copy off the "wlsetup-all.exe" file for version 2011.
The application can not be virtualized as it contains system level service named "Windows Live SignIn Assistant"
It seems that installing MovieMaker without Photogallery is 'unpossible'.
get the wlsetup-all.exe (e.g. from here: http://www.compit.se/?p=134 ) and try the following:
to silent install Windows Live essential use switchs like this :
wlsetup-all.exe /AppSelect:<ApplicationID>,!<ApplicationID> /q
/AppSelect:<ApplicationID> select features you want to install
!<ApplicationID> are features that should not be installed
/q mean silent installation
<ApplicationID> can be :
ALL (Full live essential)

PhotoGallery
OLC (Outlook Connector)
Messenger
Writer
MovieMaker
Companion (Messenger Companion)

To Uninstall all pakages at once use the wlarp.exe in C:\Program Files\Windows Live\Installer with tthe /quiet parameter. For me using this file in its origin doesn't work. I had to copy it onto the server.
