You have to create a .MSP using Office Customization Tool which comes with office source itself.
You just need to launch your setup.exe with /admin switch, It will launch the OCT. Apply your customization and create MSP
Keep the .MSP file in 'Updates' folder
You need to take care of following things mainly when you customize your office application using OCT..
1. Supress automatic updates
2. Embed License Key If you have MAK key otherwise select KMS activation if your client wants to activate it using KMS.
Office Customization Tool Walkthrough
The best way to repackage\customize Office applications is by using Office Customization Tool(OCT). Please go through below links to find more:

OCT is the best way to customize Office. Jagadeish has already mentioned it correctly. I just want to add that you can do any customizations in your Office package through it. If you do not find any option of what you want to do then it also gives you an option to Add registries file in the .MSP
You just need to place this .MSP file in your updates folder as any .MSP file placed in there gets installed with the package.
Just run your set.exe iwth /s command
