Is there any way to control the default order that the helpdesk displays Tickets in for a set Queue?

Change the default, no. However, you can create custom views and bookmark them. This is how I enter the KBOX to work the queues. The following example will sort by priority, then due date, then creation time/date.
http://kbox/adminui/ticket_list.php?ORDER[]=PRIORITY_NUMBER&ORDER[]=sort_DUE_DATE&ORDER[]=sort_TIME_CREATED
