Answer Summary:
Generate an Office MSP file by running the Visio setup program from the command line with setup.exe /admin. Place the MSP in the Updates folder for your deployment. More information for Office 2010 products can be found here: http://technet.microsoft.com/en-us/library/cc179097.aspx. The easiest way to handle any Office product is to create an Office MSP file and place it in the Updates folder.  Anything in the Updates folder will automatically run.  You can generate an MSP by running the Visio setup program from the command line with setup.exe /admin.  More information for Office 2010 products can be found here: http://technet.microsoft.com/en-us/library/cc179097.aspx
