New KACE 8.x agent not removing old Dell\KACE sub-directory, am I forgetting something?
Seems like when the agent gets updated to the new 8.0 version under \quest\KACE, the old \Dell\KACE still remains. Should it be getting removed automatically? Am I forgetting something or doing something wrong?

this is correct.
The most possible cause is special customer environments.
I've seen many customers who are using the dell\KACE subdir for different own scripts as working directory but hard coded.
If it is removed all of these scripts don't work anymore.
It also preserves log files for troubleshooting if something broke.
You can safely remove it if you really don't need it anymore for such reasons.
New agent installations will not create it anymore or use it by default except there is a script created and linked directly to this folder (if you are using the KACE scripting you can use the variables and are more flexible, but not everyone use it)
